I have a thing for muffins.
And I’m pretty sure I have passed that on to my girls, just based on their constant request for muffins for breakfast. I’m not sorry about it though. Muffins are delicious. Although, I was finding myself buying those quick and easy boxed muffin mixes over and over. I love Betty and all, but I knew there had to be a better and cheaper way!
Que DIY muffin mix search. I came across this one from The Thrifty Couple blog and it has been a hit. Best of all, it makes enough for several batches so we rarely run out of muffin mix!
++ 8 Cups All-Purpose Flour (or wheat flour if you prefer)
++ 3 Cups Sugar
++ 3 Tablespoons Baking Powder
++ 2 Teaspoons Salt
++ 2 Teaspoons cinnamon
++ 2 Teaspoons nutmeg
After I mix all these dry ingredients together I store it in my airtight glass jar until I’m ready for a muffin breakfast! (tip | write the below recipe on a label to put on your jar for quick reference)
++ 2 3/4 cups the above mix
++ 1 beaten egg
++ 1 cup milk
++ 1/2 cup melted butter
++ 1 cup add-in
++ Bake at 400 for 18-22 minutes.
Mix the wet ingredients together then combine into the dry mix, stir in the add-ins last – easy! If you check out her blog she tells you they are great on their own – but even better with add-ins. I have to be honest, I have only made them with chocolate chips…you really can’t go wrong adding in chocolate chips, am I right?!
Guys, I am not a chef or have any sort of creativity in me when I am in a kitchen. Give me a recipe and I will follow it – no more, no less. I guess, I need to branch out of my chocolate chip bubble. Let me know if you guys try these and what add-ins you come up with!!
